You mentioned a case where the blessing on the primary food also covers the secondary food, such as potato latkes and applesauce, with the blessing being made on the latke which covers the applesauce as well. Then one can eat any leftover applesauce even after the latke is completely eaten as it was covered by the blessing on the latke. What if a person then decides he wants more applesauce which was not on the plate at the time the blessing was made. Is that applesauce exempt from its own blessing as well?

Quoting from Rabbi Bodner’s “Halachos of Brochos” page 59-60: “However, if after finishing the latkes one wishes to take additional applesauce, a separate brocha for the applesauce will be required.”
